Config mode
On the title screen, press 
START . The resulting "config mode" will allow you to adjust lives, money, access the sound test and select a round[1].
Undead mode
After accessing config mode, highlight "mode" and press HOLD + for a new "undead" option. This will make Opa-Opa invincible[1].
